Der Faktor Mensch ist auch beim Verfahren der Käseherstellung ausschlaggebend, insbesondere bei folgenden Phasen, die alle von Hand durchgeführt werden und auf den Kenntnissen beruhen, die traditionell in dem Gebiet erworben wurden: die Zugabe des pflanzlichen Labs, die angesichts der geringeren Koagulationskraft im Vergleich zu tierischem Lab besonderer Fertigkeit bedarf, die Zerkleinerung des Käsebruchs, die vorsichtig mithilfe eines spitzen Instruments („spino“) erfolgt, sowie das Formen nach dem Pressen, das besonders sorgfältig durchgeführt wird, um eine richtige Abscheidung der Molke zu fördern.
